
INGREDIENTS
1 (10-12 pound) fully cooked spiral cut ham
1 cup plum preserves
1/2 cup orange mango juice
3 tablespoons stone ground mustard
2 tablespoons brown sugar
1/8 teaspoon ground ginger
Crushed red pepper flakes to taste
DIRECTIONS
In a small saucepan, over medium heat, whisk together the plum preserves, orange mango juice, mustard, brown sugar, ground ginger and a sprinkle of red pepper flakes. Bring to to a boil and then reduce to a simmer. Stir until slightly thickened, about 5 minutes.
Place the ham in a casserole dish or roasting pan. Spoon over about half of the glaze onto the ham. Bake the ham, uncovered, in a preheated 350 degree F oven for about 2 to 2 1/2 hours, or until completely warm all the way through. Continue to baste with the plum glaze, about every 20 minutes
Let the ham sit for 10 minutes before carving. Serve with glazed carrots and mashed potatoes.
